2 Hungarian peppers, roasted on the grill, peeled, and chopped with seeds (can substitute with Jalapenos)
1/4 white onion, small dice
1/2 green pepper, small dice
2 cloves garlic, minced
4 ripe tomatoes, diced
3/4 C. diced watermelon
1 lime, juiced
2 Tbsp. fresh cilantro, chopped fine
2 Tbsp. white vinegar
1 tsp. sugar
4 Tbsp. Olive oil
salt and fresh ground pepper, to taste
In a large bowl mix all ingredients and correct seasoning with salt and pepper. Serve and Enjoy!
