Chicken with a Grainy Mustard and Honey Glaze

Ingredients:

1 whole Chicken
4 Tbsp. Olive Oil
Juice of 1 Lemon
2 Tbsp. grainy mustard (Pommery)
1 tsp. Dijon mustard
3 Tbsp. Honey
1 Tbsp. fresh thyme
Salt and Pepper to taste


Method:

Break down chicken, removing meat and reserving bones for other uses. (Bones can be frozen up to 1 month). 
Cut chicken meat into pieces, cutting each breast in half; you should be left with ten pieces.   Place chicken in large Ziploc pour lemon juice, thyme and 2 Tbsp. oil into bag, seal and shake.  Place in refrigerator for at least 1 hour. (Better if allow over night).

Preheat oven to 400 degrees.

On stove, pre-heat large skillet over high heat.  Remove chicken from Ziploc, pat dry and season with salt and pepper, reserve marinade.  Add remaining olive oil to hot skillet and heat to smoking.  Place chicken, skin side down, into pan.  Sear to dark golden brown both sides.  Remove and place on a sheet pan or shallow baking dish.  Add marinate to chicken and place in oven for 20 minutes. 

While chicken is in oven, combine mustard and honey in bowl.  Remove chicken from oven after the 20 minutes and generously spread honey-mustard mixture on chicken.  Return to oven for another 5-10 minutes.  Remove and let rest for 5-10 minutes, serve.
